In 1492, an explorer named Christopher Columbus discovered what was described as "The New World". This new world was not what we today call America, but it was Cuba and the Caribbean Islands or "West Indies" and was inhabited by peaceful natives known as "Taino", meaning "good" or "noble".

To conquer and enslave was the nature of the early Europeans, it wasn't long before the Taino people had faded into oblivion. They were killed by the explorers and the diseases they brought with them. Fortunately for us today, the Taino passed on a cooking technique before their untimely demise.

To preserve meat for their long ocean voyages, European explorers would pickle meat and pack it in barrels. This meat was typically stored in a salt and vinegar brine for preservation. They would then prepare the pickled meat for consumption by boiling. As can be imagined, the end product was not very tasty and some early sources even refer to it as tasting "vile".

The Taino Indians introduced sugar and spices to the preserved meat and slow cooked it in pits dug into the ground. This process made the pickled meat much more delectable and today has come to be known as barbecue, a term derived from the Spanish word "barbacoa" which means to slow cook.
